Roasted Sweet Potatoes

We love to roast sweet potatoes.  We probably do this once a week.  It is healthy, Ellison can eat it, and they are yummy. 

I cut the sweet potatoes into about 1-inch pieces.  One large sweet potatoe is plenty for Michael, Ellison, and I.  I put them on a cookie sheet, with a drizzle of olive oil, and I season with garlic powder and pepper.  Bake at 400 for 25 minutes, then I like to finish with a broil so that they get a little crisp so 500 for about 10 minutes.  Toss 2 or 3 times while baking.  They should be soft like a fry. 

On a funny note, I saw that on Pinterest you can slice potatoes with an apple slicer.  Well since we do this allll the time, I thought why not!  ...BUT this is why not.  haha.  I should have known that they only meant regular potatoes.  Woops :).  Note: I cut both my hands, banged the slicer into my chest and slammed my head onto the counter.  Major woops.  :).

  1. Oh gosh! Glad you're okay. I can relate to the frustration of cutting sweet potatoes. I absolutely love them once they're cooked, but I find myself avoiding buying them because I can't stand to cut them up! Let me know if you find a good way to cut them. :)
